Using a large bowl, add flour, sugar, cocoa, baking soda, baking powder and salt, whisk until combined
Using a separate bowl, add milk, canola oil, vinegar, vanilla and coffee
Pour the wet ingredients into the dry and whisk until fully combined (this is a very thin batter)
Spoon batter into your lined muffin tins, filling them at least 3/4 way to the top. Bake at 350 for 18 minutes, or until a toothpick inserted into the center comes out clean.Cool in the tins for a bit before transferring them to a rack.Top with your favorite store bought frosting, or make your own delicious buttercream**TIP**Always rotate your pans half way through the baking time, to allow for even cooking
