Toasted Cilantro Lime Rice

Ingredients

jasmine rice
(or another long grain rice)

water

fresh cilantro

limes, zested
Notes
On medium high heat, melt the butter in a pan that has a tight fitting lid
Add the rice to the melted butter and toast until it becomes light golden in color (it will smell amazing too)
Add the water to the rice and stir to make sure that none of the rice has stuck to the bottom
Cover with lid and turn the heat down to low. Simmer for 15 minutes
Once the time is up, remove the pan from the heat and let it sit covered for 10 minutes
Add your chopped cilantro, the zest of 2 limes and a good pinch of salt. Taste for seasoning before serving
