Quick Fix Brothy Beans

Ingredients

Yellow Onion
(cut in half)

Garlic
(peeled)

Celery
(cut into large pieces)

Carrot
(cut into large pieces)
1
sprig
Fresh Rosemary
Several Sprigs of Fresh Thyme
1
Parmesan Reggiano Cheese Rind
1
cup
Low Sodium Chicken Broth
1
can
Cannellini Beans
(drained and rinsed)
Notes
Add two tablespoons of butter into a high sided pan, melt on medium high heat
Add in your veg and herbs and stir until thoroughly warmed through and all of the flavors infuse with the butter - this will take just a few minutes
Pour in your chicken stock and drop in your cheese rind. Simmer for around 10 minutes, stirring occasionally
Remove your veg, herbs and cheese rind and add in your drained and rinsed beans. Stir well and simmer for another 5 minutes
Serve these delish beans with a side of grainy, nutty bread and enjoy!
