Preheat your oven to 350. Grease your bread pan with cooking spray
Using a large bowl, add your flour, sugar, baking powder, baking soda, salt and spices - whisk to combineUsing a separate and smaller bowl, add your milk, oil, vanilla, vinegar and mashed bananas
Create a well in the center of your dry ingredients and pour your wet ingredients into the dry. Gently fold until the batter is fully combined
Pour batter into your bread pan and tap it a few times on the counter to remove any air bubbles. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. I like to rotate my bread pan half way through the cooking time to make sure it bakes evenly
Once the bread is finished, cool it in the bread pan until it's just cool enough to handle. Turn the bread out onto a cooling rack and wait to slice it up until it's at room temp
Notes
I also use this recipe to make freezer muffins for my daughter. I just add one cup of quick cooking oats to the milk mixture and let them soak for at least 5 minutes, or while I get the other ingredients ready. Spoon the combined batter into a lined or greased muffin tin and bake at 350 for 22-25 minutes, or until a toothpick inserted into the center comes out clean.Once muffins are cooled, place them in a large freezer bag and store them in the freezer. They thaw out in no time and my kiddo can have an Oatmeal Banana Muffin whenever she wants!
