Quick Fix Brothy Beans

We’re only given 24hrs in a day, and I don’t want to spend several of those hours making simple beans. The key to this recipe is infusing the broth with a ton of flavor so you can savor a delish bowl of brothy beans in just minutes, rather than hours

Quick Fix Brothy Beans

Ingredients

  • 1/2 small Yellow Onion (cut in half)
  • 2 cloves Garlic (peeled)
  • 2 ribs Celery (cut into large pieces)
  • 1 Carrot (cut into large pieces)
  • 1 sprig Fresh Rosemary
  • Several Sprigs of Fresh Thyme
  • 1 Parmesan Reggiano Cheese Rind
  • 1 cup Low Sodium Chicken Broth
  • 1 can Cannellini Beans (drained and rinsed)

Notes

  • Add two tablespoons of butter into a high sided pan, melt on medium high heat
  • Add in your veg and herbs and stir until thoroughly warmed through and all of the flavors infuse with the butter – this will take just a few minutes
  • Pour in your chicken stock and drop in your cheese rind.  Simmer for around 10 minutes, stirring occasionally
  • Remove your veg, herbs and cheese rind and add in your drained and rinsed beans.  Stir well and simmer for another 5 minutes
 
Serve these delish beans with a side of grainy, nutty bread and enjoy!
