Sweet Potato and Carrot Smoothie

Smoothies are a favorite in our house! Especially as the weather gets warmer, it’s a refreshing way to pack in the nutrients – AND you can customize them any way you like! Because sweet potatoes and carrots are on the sweeter side, they make a perfect smoothie ingredient!

Sweet Potato and Carrot Smoothie

Ingredients

  • 1 heaping cup cooked and frozen sweet potatoes and carrots
  • 1/2 cup diced peaches with juice (an individually packaged cup works perfect)
  • 1/2 frozen banana
  • 3/4 cup greek yogurt (or an individual serving size cup)
  • 3/4 cup milk
  • 1 tbsp honey

Notes

To make this smoothie, you’ll want to first cook equal amounts of sweet potatoes and carrots.  I usually chop them in like sizes and boil until very soft.  Once they have been drained and cooled, place them in a freezer bag and keep in your freezer.
I also always keep frozen bananas in my freezer.  Most of us will have extra bananas on the counter that don’t have much life left.  Before they go bad, peel them, half them and get them in a freezer bag for your smoothie making days.
 
For the Smoothie:
Just get all of your ingredients in the blender and blend until smooth…then you’re done! Easy peasy!
 
Note:  Enjoy these right away.  Smoothies don’t last very long and will thin out pretty quickly.  I wouldn’t recommend keeping them in the fridge for more than an hour.
