Chocolate Fudge Cupcakes

Chocolate Fudge Cupcakes

  • 1 3/4 cup all purpose flour
  • 1 3/4 cup sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tspn baking soda
  • 1 tspn baking powder
  • 1 tspn salt
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 tbsp white vinegar
  • 1 tspn vanilla extract
  • 1 cup brewed coffee


Preheat oven to 350 and line your muffin tins
  • Using a large bowl, add flour, sugar, cocoa, baking soda, baking powder and salt, whisk until combined
  • Using a separate bowl, add milk, canola oil, vinegar, vanilla and coffee
  • Pour the wet ingredients into the dry and whisk until fully combined (this is a very thin batter)
Spoon batter into your lined muffin tins, filling them at least 3/4 way to the top.  Bake at 350 for 18 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the tins for a bit before transferring them to a rack.
Top with your favorite store bought frosting, or make your own delicious buttercream
Always rotate your pans half way through the baking time, to allow for even cooking
