Toasted Cilantro Lime Rice

This is such a simple but delicious rice dish that can be used in so many ways! It’s not heavy and the lime gives it a refreshing flavor, which pairs perfectly with anything spicy! Use it for a rice bowl with some spicy toppings or on the side of some Enchiladas…YUMMMM!!!

Toasted Cilantro Lime Rice

Ingredients

  • 2 tbsp butter
  • 1 cup jasmine rice (or another long grain rice)
  • 1 1/2 cup water
  • 1 bunch fresh cilantro
  • 2 limes, zested

Notes

  • On medium high heat, melt the butter in a pan that has a tight fitting lid
  • Add the rice to the melted butter and toast until it becomes light golden in color (it will smell amazing too)
  • Add the water to the rice and stir to make sure that none of the rice has stuck to the bottom
  • Cover with lid and turn the heat down to low.  Simmer for 15 minutes
  • Once the time is up, remove the pan from the heat and let it sit covered for 10 minutes
  • Add your chopped cilantro, the zest of 2 limes and a good pinch of salt.  Taste for seasoning before serving
