Toasted Cilantro Lime Rice
Ingredients
- 2 tbsp butter
- 1 cup jasmine rice (or another long grain rice)
- 1 1/2 cup water
- 1 bunch fresh cilantro
- 2 limes, zested
Notes
- On medium high heat, melt the butter in a pan that has a tight fitting lid
- Add the rice to the melted butter and toast until it becomes light golden in color (it will smell amazing too)
- Add the water to the rice and stir to make sure that none of the rice has stuck to the bottom
- Cover with lid and turn the heat down to low. Simmer for 15 minutes
- Once the time is up, remove the pan from the heat and let it sit covered for 10 minutes
- Add your chopped cilantro, the zest of 2 limes and a good pinch of salt. Taste for seasoning before serving
